New Year + New Skin + New You

First post of the new year and I couldn't be more excited about what I have to share with you!

Turkey Cucumber Subs

Turkey cucumber subs, gone healthy!
(Because I don't need to look like a busted can of biscuits on the beach.)

These were dang easy and delicious of course. 

And since I get messages daily about where to buy Laughing Cow cheese and what it looks like...

You can get it usually at any grocery store. I get mine from Winco, but you can get it at Walmart too. 
They come in different flavors and they're SO good for cooking with. A LOT healthier version than straight up cream cheese. Which I love and can scarf down in a heart beat, but let's be honest, it's a heart attack waiting to happen. 

Turkey Cucumber Subs:

1 Cucumber
1-2 slices of turkey (I buy mine from the deli, NOT pre-packaged)
1 Laughing Cow section
Sea salt & pepper to taste


- Peel your cucumber and then cut in half. Then cut in half vertically so you can scoop the seeds out. 
- Add your turkey & spread your cheese wedge. 
- Season to taste. 

Yep. That easy.

Holy crazy month, Batman!

And in other news...

Here's how my last days of August and first day of September has gone.

- Photoshoots galore with my new photographer! I absolutely love her and I think we have an amazing future together! (Stay tuned for some amazing companies I get to work with and promote!
- I lost my flippin' diamond out of my wedding band. The places it could be are endless. I'm never in one place longer than 10 minutes and most of the time it's out and about. Guess it's time for a new ring!
- I attended an event a HUGE event and auction at Snake River Landing for the Idaho Meth Project over the weekend and met so many amazing people!
- We ended up selling our home over the weekend and have to be out by Sept 30th! AHHH! It's only been on the market for 2.5 weeks and I totally wasn't expecting it to sell so fast! But I'm thankful for it for sure.
- We also leave for the Bahamas in exactly ONE WEEK!
- Inspections on Thursday morning.

That means... SO MUCH TO DO FOLKS!

BUT... I'm incredibly thankful and feeling so blessed for all of the good that is rolling my way. 
I definitely can't complain about anything going on.
I love my life crazy and it's how we roll.

I'm also welcoming September with open arms.
I LOVE LOVE LOVE the fall and especially in Idaho!
The colors, smells, fashion, foods... EVERYTHING!

It's going to be more than crazy for us, but I'm ready for it!

We leave for the Bahamas in a week and I can already feel the sun on my face and sand under my feet.

Healthy Chicken Salad


Chicken salad is one of my favs.
I had to find a way to make that mayo packed goodness into a healthier version and I think I nailed it.

Healthy Chicken Salad 

4 cups of shredded or diced chicken
1 small case of Laughing Cow Cheese
1/4 cup cashews chopped
2 cups grapes, chopped or halved
1 jar of OPA Greek Yogurt Ranch
Black pepper to taste

Mix it all up and enjoy on a whole wheat pita or just plain!

If you're doing the #BossBabesFit meal plan that I emailed a lot of you, make sure to eat this goodness in portions.
I usually do only 1 cup.

Namaste: My soul honors your soul. 

I've been thinking a lot about life and how wise I am. (NOT!)
But really, I have been thinking about how we treat others. 
Our family. Friends. Acquaintances. People we watch and follow. 

I've had a blog post drumming up in my brain and it's sitting in the draft list until I get the nerves to hit publish and I feel like it's complete. 

A few recent incidents have kind of left me unsettled only for the fact that it seriously bugs big time that there are some who feel the need to just be flat out ridiculously all up in your biz. 
Like they think they KNOW your thoughts, life and what you go through and feel the right to judge.

I'm a pretty open book and my life is out there for you all to follow. 
I choose to share the good in my life because you know what... it's a pretty sweet life. 
I have my bad days and I'm human, but nobody likes to hear someone complain about the dumb meaningless things that make life difficult on a constant basis. So I choose not to share that. 
I feel like I have a pretty good life and I want to inspire and help other women out there as much as I can. So I display bits and pieces of my life to share with the world. 
I've met some of the most amazing women and people who have instantly became lifelong friends because I've been so open and honest. 
BUT... there has to be that one flippin' person that finds a way to just judge your life. 

And it's just really got me thinking deep lately about how we all got to where we feel the need to judge how someone lives. 
I'll be the first to admit I've done it and it doesn't feel good one bit to sit there and judge someone else. 
Going through my own trials in my life, I've realized I have NO right to judge anyone out there. 
We all have hard crap to go through and nobody will ever know what goes on behind closed doors. 
I've realized that it's not my place and... 

Ain't nobody got time for that! 

So, I've really been focusing on my yoga and my namaste lately. 
I've needed to re-focus and re-center my life around good vibes and calmness lately and one of the words used a lot in yoga is... Namaste. Meaning, my soul and the devine in me, honors your soul and the devine in you. 

It's a pretty powerful word if you think about it. 
I've been ridding my life of negative lately and focusing on all of the good that each person in this life possesses. And it feels dang good to see the good in others instead of finding the faults. 

So... until then... and I feel like I've got my thoughts all together on the whole subject...

Homeschooling! WHAT?!

Any parent wants the very best for their kids. 
I honesty never ever ever would have thought I would even consider this, but we are officially a homeschooling family! WHAT?! 

I'd be lying if I didn't say I'm completely overwhelmed and scared, but feel at peace with our decision to take my child out of public school and adventure into the magical world of homeschooling. 

Let me first start out by saying, Taylin LOVES school. She has always loved to learn and thrives on learning new things on anything. She's always been my attentive little child and is soaking in everything she hears and sees. She loved Kindergarten and 1st grade was good too, but that's when I started to notice a few different things. 

She has always been in the top of her class for learning. As a 2nd grader, she was comprehending 4th and 5th grade levels of spelling, reading and writing and her math skills were well in the 3rd and 4th grade levels too. This past summer she has begged me a handful of times to just write out random math equations for her to fill out and do. (Who does that?! I was never like that.) 

I started to notice a change in her attitude about going to school. She started to hate going and for a while I just figured she was the normal 6-7 year old who started to hate school. We worked through her thoughts and feelings on why she didn't like going and I started to pay attention to a few different things in her classroom from then on. 

I won't go into details and I won't ever say she had horrible teachers. In fact, she LOVED her Kindergarten teacher! But I will say that every child learns differently and being advanced for her age and grade, she was not getting the attention she needed and wasn't being challenged to learn and grow further. 

I've never been one to get political with anything, but I now understand why parents step in for their kids' futures and become "THAT" kind of mother. I have a few concerns now with how public schools handle certain situations. 

One of the problems I started to have was she would finish her work she was given at school and even doing homework and after finishing, she would be sent to try to "help" other students finish theirs. Umm, what?! I mean, I understand learning how to help others, but why wasn't she getting attention to learn more and grow more and instead having to help other students who weren't even understanding how to spell and read yet. (Things that should have been taught later in Kindergarten years and 1st grade levels.)

Long story short, Taylin craves learning in all forms. But when she BEGS me to homeschool her so she can learn more, that's when I started to wonder if public school is even for her at this time. And what 8 year old asks to be homeschooled? 

This has been a serious problem in my heart and mind for a while and the thought of actually homeschooling her kept growing more and more serious to me. I couldn't shake off the thought and it kept coming up in random situations in our life. 

I've done SO MUCH research, praying, thinking, asking, praying some more and talking to just about everyone I know that homeschool's their kids. I wanted all of the pros and cons. 

My concerns weren't that she wasn't going to get enough "social" life. She's one of the most social little 8 year olds I know. In fact, she would often get told she talked to much and would get in trouble for disrupting other kids. But heck... I can't blame her! When she get's A's on all of her tests and finishes her work and has nothing else to do, what else is she supposed to do?! 
We are also blessed enough that I am able to earn a full time income from home that allows us to travel and meet families all over the world. She has friends in all different states around the country and is also involved in sports and dancing in our city too. So losing her "social" life will NEVER EVER be a concern for me or her. 
And you would be surprised at how many other parents are pulling their kids out and homeschooling this year too. So, we are excited to go on all kinds of travels and trips with them that public school kids won't get to do. 

My concerns were:
Will she learn? Will she like it? Will I be able to do it? We already have the busiest life! Will we have time? 

But after weighing out the pros and cons and talking to SO SO SO many other moms who homeschool... ALL of the good outweighed the bad and I've gotta say... I'm dang excited about this new adventure! And she can't wait too. 

Another mom brought up a good point I never had thought about, but they spend a good 3 hours with recess and lunch and bus riding. That's THREE hours they could be learning and growing. Think of just spending one on one with your child for just three hours and ALL of the things they can learn in that time?! And because every child learns differently, they're getting your attention and being able to grow with their own special abilities. This same mom had her daughter blow through 4th and 5th grade in one year! She was just being held back because she didn't get the time to be challenged to learn and grow. 

My mother has taught school for 16+ years. She was dang good at what she does and I kid you not, if you ask ANY of the students she taught in that time frame, they'd all tell you she was the favorite. She considers the different learning abilities of each child and makes learning fun! I was talking out my concerns with her and she said that times are changing and NOW more than ever, she would definitely want to homeschool us as kids, but help teach her grandchildren because of the crap that goes on in the public school systems. 

Will we homeschool forever? I don't know. But I will tell you, we are just going to try it for a year and see where it takes her with her learning and growth. I only considered this because I was starting to be seriously concerned with what was going on at school. And I will only do this until she is ready to go back to a public or charter school. She most definitely wants to be a part of middle school extracarricular activities, so we will reconsider at that point. But for now, we are listening to the promptings of our hearts and the Spirit and what I feel like Heavenly Father is telling us what to do. 

You guys... I can go ON AND ON about this subject, but we should sit down and chat over lunch for that. :) 

Here's what we are SO excited about:

- Our own schedules! We don't even have to start school until after our week long Bahamas trip in September! And we can go as fast or slow as we want! If we need a day off, we can take it and not have to worry about stupid attendance rolls! 

- More traveling! And while we travel, she gets to do school in the car and plane. She begs to do worksheets in the car to keep her entertained anyway. 

- We started to think about all of the fun field trips we get to have with our own little family, but with other home schooling families in our city. We have a trip to the aquarium, planetarium and learning museums in Utah. And we get to stay in hotels and learn about new cultures and people and it's playing and memory making and learning all at once! 

- Healthy lunches!

- Exploring our state and other fun businesses in our community. 

- More time as a family, but more time with my girls. 

- She gets to learn Spanish and piano from my mom! AMAZING! 

- Learning how to grow a garden and how to do yoga and nutrition and life lessons that aren't taught at school. 

Honestly, my list for all of the exciting things we get to do makes me excited. And they're things she would never ever get to do at a public school. So we are embracing this exciting new adventure and living life to the fullest! 

What makes me happy to know, is that these promptings we were having, wasn't just me. There are SO SO SO many amazing moms I never would have guessed, that are homeschooling this year too and I can't wait to have mom/kid playdates with them! But knowing they had the same concerns too, made me feel like I wasn't a crazy person. 

I can't wait to share our adventures of homeschooling. 

I know we will have our ups and downs of it all, but I feel like I have the best support from friends, family and my husband and we will make it all work. 

Here's to new homeschooling adventures and learning on both the mother and child ends!
